Glad Thomas enjoyed the Eve's Pudding. Here is the recipe I used:
450g cooking apples, peeled and cored
75g demerara sugar
1 tbsp water
75g butter or margarine
75g caster sugar
1 egg, beaten
125g self raising flour
milk to mix
Slice the apples thinly into a greased ovenproof dish and sprinkle the demerara sugar over. Add the water. Cream the fat and sugar until pale and fluffy. add the egg a little at a time, beating well. Fold in the flour with a little milk to give a dropping consistency and spread the mixture over the apples. Bake at 180C/350F/Gas mark 4 for 40-45 minutes until the apples are tender and th sponge mixture is cooked.
